Aidani is the secondary grape variety of Santorini and one to look out for. Covering about 5% of the total area under vine it is mostly blended in PDO Santorini wines. At Vassaltis we love to bottle 1000 bottles only on vintages where the quality of the grapes is exceptional. 2020 marks the fourth time we have made this wine. It boasts aromas full of freshness while on the pallet it is has a smooth silky texture, with low acidity and a characteristic salinity.
