Santorini barrel aged


Santorini Barrel Aged is a wine our oenologists are especially proud about. Made from 100% Assyrtiko, this wine ferments in steel tanks and is then aged in 3rd use 500lt French oak barrels on it lees. It ages for a further seven months in stainless steel tanks and eight months in the bottle before its re- lease.

This wine defeats criticism that Assyrtiko shouldn’t be aged in oak to preserve its volcanic characteristics unadulterated, by giving a perfectly balanced wine with great complexity and great ageing potential.

Nose: Toasty and vanilla aromas, wet stone, citrus, very complex
Taste: Vanilla, salt, citrus, refreshing acidity, well structured and balanced with the oak, full bodied, very long after-taste Ageing potential: 10 years
Serving suggestions: Sea-food, grilled white meat and light sauces, at 10 – 11° C.all-day wine, best at 10 – 11° C
